Grilled Cherry Goat Cheese and Arugula Pizza


  • 1 large piece of pre-made Naan or flatbread
  • 1 tablespoon extra-virgin olive oil
  • 1 clove garlic, smashed (or 1 teaspoon of minced garlic)
  • 1 cup Rainier Fruit Dark Cherries, pitted and halved
  • 2 ounces goat cheese, crumbled
  • 1 cup arugula
  • Balsamic glaze, enough to drizzle
  • Salt and pepper to taste

Prep Time: 15 minutes
Cook Time: 15 minutes
Serves: 2


1. Preheat grill to medium-high heat
2. In small saucepan heat the tablespoon of oil then add in the smashed clove of garlic
3. Remove the oil from the heat and let the garlic infuse the oil for a few minutes
4. Brush the top of the naan/flatbread with half of the garlic infused oil
5. Place the crumbled goat cheese and halved cherries on a plate and take them out to the grill with you along with the prepared naan/flatbread
6. Oil the grill grates then place the naan/flatbread oiled side down onto the grill
7. Brush the top of the naan/flatbread with the remaining oil
8. Grill the pizza dough for 2-3 minutes then flip it over to grill the other side
9. Immediately scatter the goat cheese crumbles and cherries over the top of the pizza
10. Grill for another 2-3 minutes then remove from the grill
11. Top with the arugula, balsamic drizzle, and salt and pepper to taste

Pizza can also be made in oven instead of grilled – insert naan/flatbread in oven on baking sheet with the top oiled for 2-3 minutes, remove and add cherries and goat cheese – baked 2-3 minutes more. Remove from oven and top with arugula, balsamic drizzle and salt/pepper.
