Summer is not over. Not even close. Okay, maybe a little close. Which is even more reason to enjoy what’s left of it! We put our friend, Alexandra Hedin, of The Weeknight Society to work whipping up a fast and fabulous feast that showcases the best of summer. And by “the best of summer,” we clearly mean blueberries. She came through with two simple recipes that will have your tastebuds and guests struggling with self-control.

Here’s how to squeeze the last bit of summer onto your plate:

Begin by snuggling all ingredients together for a pre-meal family portrait. This helps them get acquainted and facilitates the melding of flavors. While this is taking place, you could be pre-heating the grill to around 300 degrees.

Find a small bowl to further reduce their personal space bubbles. Remember, ingredients don’t have feelings. If at this point you realize that your butter is not room temperature, now would be the time to let this bowl of summer color hang out for a bit. Otherwise you risk that awkward half-stabbing, half-clobbering that is simultaneously unproductive and infuriating.

When you feel that you can safely combine these ingredients without verbally-attacking anyone who might wander into your kitchen, mash away and add salt and pepper to your taste and dietary recommendations.

Now smear that on the salmon filet.

Place your future dinner on foil and gently lay it to rest on your grill. Shut the lid and let cook for about 15 minutes or to your desired level of doneness.

While you are salivating thinking about that salmon slowly drowning in a pool of salty, creamy butter, distract yourself for five minutes by making the side dish. Cut the corn off the cob and mix with the remaining blueberries and thyme.

Have you ever made the easiest, most delicious dressing ever? It’s basically mixing the olive oil, vinegar, Dijon mustard, salt and pepper and adding to any (and we mean ANY) salad.

By now the salmon should be just about done. Take it off the grill and let rest while you set the table.

You certainly don’t have to, but you could nestle the salmon atop a bed of arugula or other greens. Add some festive napkins and voilà! Simple summer supper success! (Say that three times fast.)
